🍝How To Make Italian Fresh Pasta: Ravioli Edition
Ingredients (4 people): - 4 eggs - 400g flour
🥣Place the flour in a bowl. 🥚Make a well in the centre and crack the eggs onto it

🤏🏼Using the tip of your fingers, mix the eggs with the flour until everything is combined

❗️Secret ingredient: add a pinch of ground nutmeg

💪 Arm yourself with patience and elbow grease, and knead the dough: stretch it and roll it, until you get a smooth dough

Wrap your dough in cling film

🛌Cover it with tea towels and let it rest at room temperature for at least 1 hour

After 1 hour, place your pasta machine on the work surface, dust the surface with some flour and work the dough again for some minutes

With the use of a (real) rolling pin, press the dough to make it flat and thin. Try to create a long rectangular shape... ➡️

👷Divide the rectangular pasta dough in 2 parts, add some extra flour on both of them and call in for reinforcements: time to roll the dough out!

Take one of the two rectangles, fold it in half and start rolling it out through the pasta machine

Repeat the last step again

Until you get these beautiful long thin stripes. Time to put the filling in our soon-to-be ravioli!

We prepared our filling with ricotta and salmon but really, your can put whatever you prefer!

With the use of a tea spoon, place the filling in a line down the centre of the first strip, about 5cm apart from each other

✌️Tip n.2: to get a perfect seal, moist the edges of the dough with some water before placing the other stripe on top

Gently place the other pasta sheet directly on top

Cut off any excesses and make a long rectangular shape

Gently press on the dough around the filling to eliminate any excess air. To do so, moisten the tips of your fingers to facilitate it

With the use of a ravioli cutter (or a knife like we did), cut the sheet of pasta into squares, or into circles

🍴Extra seal the ravioli with a fork

Bring a large saucepan of water to boil (don’t forget to salt the water! 🧂)

Prepare a sauce to coat your ravioli (ours is made with pistacchio and basil), place it in a pan and let it simmer

Carefully dive some of the ravioli into the boiling water and cook until they rise to the top (approx. 3 minutes)

🕺🏻The cooking time is equal to the time of a little dance in the kitchen💃🏻

When ready, take them out and cook the other batch

Put the ravioli in the pan with the sauce and gently coat them

🍝Serve and garnish with grated Parmesan or whatever you prefer (we added some pistacchio crumbs). Buon appetito!
