Roast ginger, garlic and chili flakes with a bit of olive oil in a skillet.

Deglaze with coconut milk and vegetable broth.

Stir in broccoli florets and carrot cubes.

Add curry and cilantro bring to a boil while stirring occasionally. Simmer covered for 10 minutes.

At last add mango cubes and cashews. Stir well and cook again for 3 minutes.
