Must have: 3 tbsp of National Achar Gosht Masala

Sauté 6-8 curry leaves, pinch of methi dana and 1/4 tsp mustard seeds for 30 seconds

Add in half a diced onion, sauté until the edges are lightly golden

1 tsp each ginger and garlic

2.5 cups cubed potatoes

1/2 cup peas, 1/2 cup diced carrots

3 tbsp National Achar Gosht Masala

Stir to combine

Cook on low for 20-25 min until potatoes are done- add a splash of water if the masala sticks!

Add 3-4 slit chilies, 1 tsp National Kasuri Methi, 1/4 tsp pepper

Squeeze over a quarter lemon, mix, cover, turn the stove off and let it sit for a few minutes
