Air Fryer Eggplant Parmesan
Slice the eggplant into evenly sized round pieces.
Prepare the breading by placing the flour in one shallow dish, the egg in another shallow dish, and the breadcrumbs and spices in a third dish.
Place an eggplant round into the flour mixture and coat it well.
Transfer it to the egg and flip to coat as much as possible.
Transfer it to the breadcrumbs and coat as much as possible.
Place the breaded slice in the air fryer basket. Repeat process for the remaining slices. (For best results, don’t overcrowd!)
Cook at 400 degrees for 8 minutes, flipping halfway through. Place a spoonful of marinara on top of each eggplant slice and top with mozzarella.
Cook for an additional 2 minutes at 350 degrees. Top with Parmesan and chopped parsley (optional step).
