Air Fryer Irish Egg Rolls
Use the leftovers from your corned beef and cabbage dinner to make delicious Irish Egg Rolls.

Chop and dice your cooked ingredients.

Mix everything together in a large bowl.

Place an egg roll wrapper on a cutting board. Add a 1/4 C of the corned beef mixture.

Fold up the bottom corner of the egg roll wrapper.

Fold in the left and right corners.

Brush the top corner with water.

Tightly roll the egg roll away from you and secure the last corner.

Spray the air fryer basket with cooking oil, and place the egg rolls in the basket. Lightly spray or brush them with cooking oil.

Cook in a preheated 400 F air fryer for 18 minutes, turning over half way through cooking.

Measure the ingredients for your Creamy Horseradish Mustard Sauce, plus 1/4 tsp each of salt and pepper.

Whisk together in a small bowl. Refrigerate until ready to use.
