Air-Fryer Cauliflower Rice Bowls
Chop one head of cauliflower into florettes. Sprinkle with 1t cumin, 1t paprika, and 1/2t cayenne.

Place on the top rack of the air fryer and fry at 350 for 15 minutes. Or bake in a regular oven at 450 for 15 minutes.

Cook 3/4c brown rice according to the package directions.

Defrost 3/4c frozen edamame.

Chop one green bell pepper, 1/2 cucumber, and 1/4 red onion.

Mix 1/2c non-dairy yogurt, 1T tahini, 1/2t cayenne, and 1/4t salt.

To assemble the bowls, start by adding a bed of rice.

Add about a quarter of the cooked cauliflower.

Top with all of the fresh vegetables.

Sprinkle on a serving of edamame.

Finish with dressing. Enjoy!
