Algerian Semolina Bread
Mix semolina, strong white bread flour, salt, yeast and sugar in a bowl

Make a well, add the oil and mix with your hands until crumbly

Add water and incorporate with a d-scraper

Knead and shape into a ball. Add more water if dry. Cover with a tea towel and set aside for 5 mins

Cut dough in half. Dust surface with semolina and shape into 2 balls. Prove on tray for an hour

Roll each ball into a circle

Cook for 2 mins each side. Place on tray and bake in oven for 15 mins.

Cut into quarters and serve warm!
