Gather your ingredients.

Heat olive oil in a large pan.

Chop the onions.

Add cherry tomatoes to the pot. With the can juices.

Add 2.5 cups water.

Add the chopped parsley.

Give it a good stir.

Put on the lid and simmer for 2 hours.

Check it for doneness- everything should be soft.

Grab your stick blender.

Blitz until smooth.

Pour in the passata and mix through.
