Almond Flour Peanut Butter Cookies
In a large bowl beat the peanut butter with the coconut sugar using an electric mixer

Add in the egg, egg yolk, and vanilla. Beat until well mixed

Add almond flour, baking soda and salt, then stir until well combined

Scoop into 1 tablespoon sized balls. Place on pan and press down to about 1/2 inch thick

Bake at 350 for 13-15 minutes
