Almond Joy Treats (Gluten-free)
This healthier version of Almond Joy Cookies is a perfect sweet treat that you don’t have to feel guilty about eating.

You will need: 1 can coconut milk, 4 tablespoons honey, 2 cups coconut, 3/4 cups almonds, 1 egg, 1 cup almond flour, 6 ounces dark chocolate.

Pour the coconut milk in a small sauce pan, add the honey, and simmer over medium-low heat.

Cook for about 25 minutes, stirring occasionally, until milk reduces and turns a light caramel color. Cool the milk completely before adding.

While the milk is simmering chop your chocolate. Or, you can use chocolate chips.

Add the almond flour, coconut, almonds, and egg to a large bowl. Pour the cooled milk into ingredients.

Stir to thoroughly combine the ingredients.

Fold in the chocolate.

Place silicone muffin cups on a sheet tray, and preheat the oven to 325 F.

Equally distribute the batter among the 12 cups...

...then press down firmly with the back of the spoon to flatten the batter in each cup.

Bake for about twenty minutes.

Cool completely on a wire rack. Then remove the treats from the cups, and store in an airtight container in the fridge.
