Almond Rhubarb Cake (tea cake)

Whisk together the flour, almond flour, baking powder & salt

Place the butter, sugar & vanilla paste/extract in a large bowl

Mix until light and fluffy

Not there yet...Scrape down the side of the bowl a couple of times and then keep going

Then add eggs one at a time

Reduce speed & start adding the dry ingredients

Then add the yoghurt & mix until just combined

The batter will be thick - fold in the rhubarb

Scrape batter into greased and lined pan

Smooth out batter

Place the remaining strips of rhubarb decoratively over batter

Sprinkle with sugar and bake

Allow to cool 10min, lift out of pan with parchment and cool completely before serving
