In a stand mixer or using a hand mixer, mix together coconut oil and sugar.
Add eggs and mix well. (This is a double batch.)
Add the baking soda and half of the flour. Mix well.
Add half of the bananas. Mix to combine.
Add remaining flour and mix to combine.
Add remaining bananas and mix to combine. Add any additional ingredients now.
Pour into greased loaf pan. Bake at 350 degrees for about 60 minutes.
Let banana bread cool.
Slice and enjoy!
