Blueberry Blender Muffins (Grain Free!)

Preheat your oven to 375°
Add 2 bananas

Add 1/2 cup chia seeds then blend until creamy

Add 1 cup almond or oat flour

Add 1 tsp baking soda

Add 1/4 tsp sea salt

Add 1/4 tsp cinnamon

Add juice from 1/2 lemon (the baking soda will fizz)

Add 1/3 cup maple syrup

Add 1/2 tsp vanilla extract

Blend until fully mixed

Add 1 cup wild blueberries, then hand mix

Grease the pan with coconut oil or use muffin liners. Spoon heaping tablespoons of batter into pan

Cook for 25 min until golden brown

Let cool for 5-10 min. The perfect high-fiber, gluten-free, plant-based healthy snack or breakfast.
