Eggs
3/4 cup
Lemon Juice

Lemon Zest
Beat coconut oil and swerve until mixed

Stir in salt and sifted coconut flour

Press into pan

Bake at 350 until the edges are golden. About 10 mins

Cool 30 mins

Whisk eggs and lemon zest by hand

Whisk fresh lemon juice and swerve by hand

Whisk in coconut flour a little bit at a time

Add lemon juice mixture to egg mixture and whisk by hand

Pour over cooled crust

Bake at 325 until just the center is slightly jiggly. 20-22 mins

Cool to room temperature then refrigerate at least 6 hours
