No Machine Homemade Spinach Pasta + Sauce

Wilt 8-16 oz of raw spinach in a pan over medium heat

Squeeze all liquid out of the spinach

Crack 5 large eggs in a separate bowl

Blend eggs, spinach and 2 tbs olive in a food processor

Make sure there’s no large bits of spinach left

Spoon in 4 cups of tipo “00” flour or All-purpose flour

Create a well and pour your spinach and egg mixture in the center of it

Slowly incorporate the wet ingredients to the dry

Knead the dough until it comes together, forming a soft firm dough

Cover the dough in plastic wrap and let it rest at room temperature for 30 minutes

Cut the dough in 4 pieces

Take each piece and roll it out until it’s about 1/8 cm thickness.

Gently roll the thin pasta dough

Cut the do into 1/2 cm cuts

Dust in flour and neatly wrap in a nest

For the sauce: melt 4 tbs butter and sauté 1 minced garlic clove, red pepper flakes and salt

Add about 1/2 cup white wine and bring to a simmer

Bring a pot of water to boil. Salt the water as well

Cook your pasta in the boiling water for 1-3 minutes depending on thickness

Transfer the pasta to your sauce to continue cooking

Add your 1/4-1/2 cup shredded Parmesan or pecorino

Continue stirring until pasta sauce thickens. Add pasta water to thin it out
