Nuts About Berry Salad W/Strawberry Dressing
Secure your cutting board with a wet paper towel.
Add the greens to the salad bowl.
Break up any large leaves of lettuce. Look for any brown pieces and discard.
Submerge the fruit in water to clean. Slice grapes in half.
Remove the top of the strawberries and slice in quarters.
Add the boysenberries to the salad.
Cut the top and bottom off the kiwi and scoop the flesh with a spoon. Cut into small pieces.
You can also cut the kiwi by removing the skin with a pairing knife and cutting the kiwi from there.
Add blueberries. I used frozen wild blueberries and just soaked them in water for 3 minutes.
Add candied pecans.
Slice some rotisserie chicken and add to the salad.
To make the dressing place strawberries into a mini food processor.
Add the honey.
Add white balsamic vinegar and blend for 20 seconds.
Stream in coconut oil and blend.
Add Kosher salt. To make creamy version you can follow next steps. If not place dressing in a jar.
To make the creamy version remove half to a mason jar and add Greek yogurt.
Blend and add poppyseeds.
Add honey goat cheese. Tip: freeze the cheese for 10 minutes to crumble easier. Drizzle w/dressing.
