Overnight Pizza Dough

Olive Oil
Measure 700 grams of 95° water. Use about 3 tablespoons to hydrate the yeast.

Add the remaining water to 1000 grams of flour.

The autolyse. Mix until just incorporated.

Add salt and yeast.

Thoroughly mix the dough.

Over the next hour, fold the dough once or twice.

When done folding, coat the bottom of the bowl lightly with olive oil. Let rest for 12 hours.

When the dough has tripled in size, it's time to divide.

Flour work surface and gently transfer dough.

Divide dough in to five eqaul pieces. Shape in to a ball. Place on a floured tray.

Cover and refrigerate until ready to use.
