You want plantains that are starting to turn black.

Peel the plantains and cut into 1/2-inch coins. Toss with the brown sugar.

Melt the coconut oil in a large skillet over medium heat. Add the plantains in a single layer.

Whisk together maple syrup & vanilla. Pour over plantains and cook until golden. Flip and repeat.
