Corn Tortillas

Himalayan Salt

Salsa Verde (green Salsa)
Avocado (sliced)

Preheat oven to 425F and in the meantime...

Cut one large sweet potato into small squares

In a small bowl add 1 tsp extra virgin olive oil

1 tsp of chipotle Chili pepper or paprika for a non-spicy option

About 1 tsp of Himalayan or Sea salt

Whisk together until the mix looks uniform

Place sweet potatoes on baking sheet & brush the mixture evenly

Bake for 25 - 30 minutes

In the meantime rinse one can of black beans

And measure 1/2cup salsa verde

Add rinsed beans and salsa verde into a pan or wok, stir until mixed and cook for about 5 minutes.

Meanwhile warm tortillas in another pan on medium heat

To serve add beans, sweet potato, cottage cheese avocado to the tortilla. (Add a touch of lime too)

PS. You can skip the tortillas and make a Buddha bowl instead!
