Add heavy whipping cream, sugar, and vanilla to a bowl and mix until thick and peaks form
Add softened mascarpone cheese and mix only until combined. Do not over mix.
Dip both sides of ladyfinger biscuits quickly in espresso *room temp* and layer in dish
Spread cream evenly on top
Repeat and add another layer of biscuits. Doesn’t have to be perfect!
Add final layer of cream and spread evenly
No waste! Add remaining espresso on top and mixed it with the cream. Refrigerate for at least 2 hrs
Sprinkle cocoa powder on top and done!
