Apple Cider Vinegar & Apple Overnight Quinoa
To a saucepan add 1 green apple chopped into cubes

Add a teaspoon of cinnamon

Add 2 1/2 tablespoons of apple cider vinegar

On a medium heat simmer for 6-8 mins or until apples softened & vinegar reduced (leave cool)

In another saucepan add 1 cup of quinoa

Add 2 cups of water

Bring to the boil and simmer until water absorbed (leave cool)

To a large bowl add cooled quinoa

Add 1/2 cup of coconut milk

Add 3 tablespoons of greek or dairy free yogurt

Add 2 tablespoons of honey

Add 2 tablespoons of goji berries

Add 2 tablespoons of desiccated coconut

Add your cooled apple cider apples

Pop on the lid and leave overnight

Top with flax/coconut, goji berries & sliced apple & enjoy
