Add the flour to a stand-alone mixer’s bowl with the paddle attachment.

Continue by adding the salt and sugar. Start mixing at low speed.

Slowly add the butter in small chunks and keep mixing.

Add the yolks.

Add the apple cider vinegar.

Keep mixing until you have a homogenous dough.

If necessary, finish mixing by hand. Plastic wrap your dough and chill it for at least 30-40 minutes before rolling.

Once chilled, add flour to your work space to start rolling the dough.

Roll out the dough into a thin circular form.

Add butter to your pie mold.

Place your dough in the pie dish.

Press down and make sure the bottom part is flat and there are no air bubbles between the pie dish and the dough.

Roll out the leftover dough and with a knife cut 1-2 inch lines. Set aside.

Place the diced apples in a bowl and add the sugar, lime juice, vanilla extract, cinnamon, cardamom and nutmeg.

Trasnfer this mixture to a pan.

Add the butter.

Add a pinch of salt. Cook on the stove for about 10 minutes, until the apples are a little bit tender.

Strain this mixture to remove excess liquid.

Transfer it to your crusted pie mold.

Add a pinch of cinnamon on top.

Cover your pie giving it the “basket” effect. (Or cover as desired).

Cut the ends.

Whisk the egg and with a pastry brush egg-wash the top of your pie. Making sure it is evenly covered.

Bake at 350F for 35-45 min. Until the top is golden brown. Enjoy!!!
