Combine chopped apples, sugar, and brown sugar in skillet. Heat to boiling.

Stir in flour and boil 2 minutes until thickened. Stir in butter and lemon juice.

Remove from heat and stir in vanilla. Set aside.

Combine flour, brown sugar and oats. Cut in butter with pastry blender until it’s course crumbs.

Whisk together: flour, whole wheat flour, sugar, baking powder, cinnamon and salt.

Whisk together eggs, vanilla extract and milk. Add to dry ingredients. Stir just until mixed.

Scoop batter into muffin pans.

Top with heaping tablespoon of apple pie filling.

Then top with streusel crumbs.

Bake at 400F for 20-25 minutes.
