Mix flour, sugar, and salt in a bowl

Add the chilled cut butter and toss them around to coat them well

Using your fingers cut the butter into pea sized chunks

Mix ice, water, and apple cider in a cup

Gradually sprinkle the liquid mixture onto the flour mixture and mix with a spatula

Keep adding until dough holds together but isn’t wet

Shape into a rectangle, cover, and refrigerate for at least 2 hours

Prepare the pie filling; slice apples with knife or mandolin

Toss sliced apples with lemon juice

Add the sugar and make sure the apples are coated

Melt butter in a pan and add the apples

Add the spices, mix and cover. Cook for 10 min on low fire

Strain the apples and add the juices back into the pan to reduce

Once reduced, mix it back with the apples and let them cool down COMPLETELY

Roll out the dough onto a lightly floured counter

Place onto desired pie dish, and trim the edges

Crimp the edges or decorate as desired

Add the cooled filling, and freeze until you finish the top

Freeze for another 10 min

Egg wash before you bake (40-50 min in a preheated oven at 200C)
