Medium heat, add olive oil & chopped onions

Add chosen vegetables (red pepper & green beans for me)

Add freshly puréed tomatoes

Add; saffron - smoked paprika powder - salt & pepper - caldo (stock)

Bring stock to simmer and add the rice evenly

Leave to simmer on low heat for approx. 20 minutes. Don’t stir!

Sprinkle with lemon juice, and decorate with; roasted pepper, roasted garlic, lemon wedges & parsley

Serve with the pan on the table
