Mix together water, yeast, sugar, oil, salt, and flour. Knead until smooth.

Cover with a damp kitchen towel and let rise for 15 minutes.

Form into 3 ounce rounds. Make a hole in the center and smooth the shape.

Cover again and let bagels rise for 20 minutes.

Bring water to a simmer in a large pot with sugar.

Boil bagels in batches for 2 minutes per side. Use a chopstick or spider to flip bagels.

Place boiled bagels onto a cookie sheet lined with a silpat or parchment paper.

Sprinkle asiago over each bagel.

Bake in 375 degree oven for 30-35 minutes, then cool on a wire rack.

Store in a tightly sealed container up to 2 days or freeze for later.
