Soak 3 Tbsp raisins in rum overnight

Ingredients 4 eggs separated, 1 cup of flour, 3 Tbsp sugar, 1/2 tsp vanilla, 1 1/2 cups milk, raisin

Whisk 4 egg whites until soft peaks form

Add 3 Tbsp sugar to 4 egg yolks

Add 1/2 teaspoon of vanilla to the egg yolks and sugar

Whisk together until combined

Add 1 cup of flour and 1 1/2 cups of milk slowly to egg yolk batter

Mix in all the flour and milk to the egg yolk mixture

Add the whisked egg whites to the egg yolk bowl

Gently fold in egg whites into egg yolk batter and let sit for 10 minutes

In a heated large skillet melt 2 tbs butter then add all of the batter to the heated skillet

Add the 3 Tbsp of rum soaked raisins to the batter

Cover the skillet and let cook approximately 10 minutes before flipping

Flip over and cook about 10 minutes more; you might have to cut it into several portions to flip

Break up into pieces with your spatula

Once done, plate the pancake and add powdered sugar

Time to eat your Austrian pancake - serves 4 but you may not want to share
