Authentic Aloo Ki Tikki

Dry roast the cumin powder.

Take half of the cumin powder and add to your grated potatoes.

Add red chili powder.

Mix well by hand.

Add the rice flour mix well and keep it aside.

Now in the fry pan with remainder of the cumin powder add oil and heat it up then add in cumin seeds and coriander seeds.

Add both dals to the fry pan and mix well.

Add red chili powder, coriander powder, turmeric powder, amchur powder, and black salt.

Add water, mix well, let it fully evaporate.

Add the paneer and the peas and mix well for 5 min. This will give them time to cook a little.

Add raisins and mix well.

Add cilantro and mix well!

Make a medium size patty out of the potato mixture and add the dal mixture in there. Close it like this.

Apply pressure while you are doing this step.

Roll it around like this

Keep rolling for perfection.

Heat the oil and place the Tikki in and don’t flip or touch the tikki until you see orangish color on the edges of the tikki.

Now do the same thing to the other side meaning let it get the same orangish color. Remember not to touch until it’s done.
