Authentic Kofta Curry (Delhi Walay Style)
Let’s make Delhi Walon Kay Koftay

Soak combine rice and the lentil in a small bowl and let them soak in water for overnight or 7 hours.

Discard the water from the bowl.

Combine red chili powder, black pepper peppercorns,cumin seeds, cloves, green cardamom, black cardamom, and others on the blog.

Now add the rice and lentil and pulse it again

Add ground beef and pulse it in the food processor for 1 minute. Take it out from the food processor and set aside. (Don’t put away processor yet.)

Add oil in a large pot and let it heat up.

Now add the oil and medium brown them.

Once it’s beautiful brown take them out and make sure there is oil left in the pot. Set the pot aside for now. (Very important step)

Have the plate lined with 2 paper towels. Set it aside for 30 minutes.

After 30 min mix the yogurt and the cooled light brown onions in the same food processor that we used earlier. (Very important step)

Add some of the yogurt mixture to your ground beef mixture and mix well. Put the your yogurt mixture aside you are going to use that later.(important)

Shape the meatballs

Reheat the oil that was in the pot and add ginger garlic paste

Mix well for 30 seconds.

Add the spices and mix well.

Now add water and let it cook away. I can’t tell tell you how crucial is this step. Please never skip this step or reduce the water quantity.

Place in the meatballs make sure from this point you don’t have cooking spoon in the pot. This step is very crucial too.

When the meatballs are half cooked add the yogurt and onion mixture in forms of little dollops in between the meatballs. (Very important step)

Now don’t try stir in the little dollops with a cooking spoon instead move the pot back and forth use the oven mitts shaking the pot (imp. step)

Let it cook fully now and garnish with cilantro.
