Baked Chicken And Dumplings Casserole
Add 1/4 cup butter to a 9x13” baking dish and melt it while the oven preheats to 400F.

Add 2 cups of cooked shredded chicken to the melted butter.

Add in 1/2 cup frozen peas.

Add in 1 cup diced carrots.

In a separate bowl, whisk together 1 cup self-rising flour and 1 cup milk.

Drizzle the batter over the chicken and veggies, but do not stir.

The batter won’t fully cover the mixture, and that’s normal!

In another small bowl, whisk together 1 cup cream of chicken soup (I use homemade, but canned works too) with 1 3/4 cup chicken broth until smooth.

Pour this mixture over everything else. Again, don’t stir!!

It doesn’t look like much yet...but just wait til it bakes!!

Pop it in the oven for about 40-50 minutes.

Once the dumplings are golden-brown, remove from oven and let cool for about 15 minutes before serving.
