Baked Orzo In The Enamelled Cast Iron Dutch Oven
Chop 1 onion in the Manual Food Processor

Core 1 red pepper with the Scoop Loop. Process in the Manual Food Processor.

Core 1 green pepper with the Scoop Loop. Process in the Manual Food Processor.

Add 2 tbsp. each olive oil & Pampered Chef Greek Rub, 3-5 chopped garlic cloves, 1/4 tsp. sea salt, 1/2 tsp. hot pepper flakes. Cooked 3-4 minutes.

Add 2 cups vegetable broth to the Dutch Oven.

Add 2 cups orzo pasta to the Dutch Oven.

Add 1 can fire roasted diced tomatoes. (or use what you have on hand).

Add 1 can chickpeas or white kidney beans is what I had available to use today.

Add 5 oz (150 g) (half a big bag) of spinach leaves.

For extra protein and fibre, I added 3 scoops each of these Pampered Chef Enrichables.

Cover and bake in 400° oven until the liquid has absorbed and orzo is soft. About 12-14 min.
