Baked Orzo With Chicken Skewers
Preheat Oven to 400. Heat 2 tbsp oil in 6 Qt Enameled Cast Iron Dutch Oven over Medium heat for 3-4 mins

Working in batches, chop 1 onion and 2 bell pepper in the Manual Food Processor

Add 2 cups Vegetable broth

Add 2 cups Orzo Pasta

Add 1 can Fire Roasted Tomatoes (undrained)

Add 1 can Chickpeas (drain and rinse)

Remove from Heat. Stir in Spinach (I omitted). Cover and bake 12-14 mins

Top with feta and olives if you’d like. Serve with some Chicken Skewers ❤️
