Cajun (or Creole) seasoning

I'm using the deluxe air fryer for this recipe. Line the toaster pan w/parchment paper spritz w/oil.

In wide bowl combine panko crumbs and the parsley.

Put flour in a wide shallow bowl.

In another bowl whisk the eggs, cajun seasoning and mayo together.

Sprinkle both sides of fish with salt and pepper. Dip fish in flour, coating each side thoroughly.

Dip fillets in egg mixture then coat with bread crumbs mixture, press lightly to adhere to the fish.

Arrange fish on toaster pan.

Bake about 16-20 minutes or till fish flakes easily with a fork. Adjust cooking time based on size.
