baked salmon w/creamy coconut spinach sauce
the ingredients

preheat oven to 425 degrees F. Season fish with olive oil & Old Bay seasoning ~ bake for 14 minutes

meanwhile, make the sauce ~ add olive oil to pan with scallions and cherry tomatoes ~ sauté

season with kosher salt and pepper

add garlic and Italian seasoning ~ sauté

add red pepper flakes

add Dijon mustard

add coconut milk

bring sauce to a gentle boil and add spinach

simmer and stir until spinach is wilted
