Baked Vegan Taquitos
Start by crumbling a block of super firm tofu.

Add diced onions and spices. Mix to combine.

Pour over a lined baking sheet.

Bake at 400F for 15 to 20 minutes.

Meanwhile, add cashews, nutritional yeast, and other seasonings to a blender to make a cashew queso.

Thicken the cashew queso and add green chiles and cilantro.

Mix the queso and tofu crumbles together to make the filling.

Add the filling to warm corn tortillas and roll each one.

Place the taquitos seam-side down on a baking tray.

Bake at 450F for 15 minutes. Or you can cook them in the air fryer!

Serve with pico de gallo, guacamole, and vegan sour cream.
