Balsamic Braised Short Ribs
Season short ribs with a generous amount of salt and pepper.

Place them on a rack over a sheet pan, plastic wrap and refrigerate overnight.

Sear short ribs over medium high heat on all sides until browned, remove and set aside.

Add carrots, onion, fennel and garlic, cook for about 3 minutes.

Stir in anchovy paste and tomato paste.

Season with salt and pepper and cook for a few more minutes.

Stir in stock, vinegar and bay leaves. Bring to a boil.

Once boiling, turn off heat and return short ribs to the pot. Cover and place in the oven at 325 degrees for 3 hours.

After 3 hours, serve and enjoy!
