Balsamic Braised Tofu w/ Tomato, Olive, & Fennel Relish
Add balsamic vinegar, soy sauce, and herbs to a small bowl. Then whisk.
Add tofu to an oiled baking dish. Spoon 1/3 of the balsamic marinade over the tofu.
Bake for 15 minutes, then flip.
Add another 1/3 of marinade, making sure tofu steaks are completely covered. Then, bake for another 15 minutes.
Remove from oven again, nestle lemons next to the tofu, add the rest of the marinade, and bake for a final 15 minutes.
While the tofu cooks, make your relish by adding fennel, garlic, tomatoes, olives, lemon zest, & spices to a pan and sauté for 5-10 minutes.
Serve by placing tofu on a plate, and topping with relish, lemon, and some reserved fennel fronds.
