Balsamic Chicken Salad with Beets & Cherries
Roast the beets!

Wash and wrap each beet in a piece of foil.

Bake at 400° until knife inserted comes out easily, about 45-60 min.

When still warm, skin will just rub off easily with paper towel. Then slice.

Marinate the chicken. Get your fresh herbs ready: thyme, oregano & dill.

Chop herbs and combine w 2 T olive oil, 2 T balsamic, 2 t paprika, juice & zest of 1 lemon.

Marinate chicken min 1 hr or overnight then grill to perfection!

Balsamic Dressing: 2/3 c olive oil, 1/3 c balsamic, 1 T dijon, 1 t sugar, S&P

Start assembling your salad! Lettuce fresh from the garden & thinly sliced red onion.
