Banana Caramel Self Saucing Pudding
For the caramel sauce, add brown sugar, cream, milk & vanilla essence in a saucepan & let it simmer

Turn off the flame as soon as sugar dissolves. Keep stirring. Sauce would be quite runny

Preheat the oven at 170C. In a bowl mash the bananas well

To these add whisked eggs, vanilla & milk, fold in well

To the liquid ingredients add all dry ingredients

Thats brown sugar, flour, baking powder & salt

Fold in all dry ingredients well

Grease an oven proof deep 2L dish

Mix toasted pecans or walnuts to batter

Pour batter into the dish

Place banana slices and pecans on top

Slowly pour the sauce on top & bake for 35-40 mins

Enjoy warm pudding with vanilla ice-cream or Chantilly cream.
