Mix in 2 eggs, 1/2 c maple syrup, 1/4 c avocado oil, 2 t apple cider vinegar, 1 cup grated carrots, and 1 t vanilla.

Add 2 c whole wheat pastry flour, 1 t baking soda, 1 t baking powder, 1/2 t salt, and 2 t cinnamon. Mix until just combined.
