Banana Coffee Cake With Streusel Topping
Preheat oven to 350 degrees and prepare 8x8 pan with parchment paper.

Peel 3 over-ripe bananas and purée with mixer.

Add remaing wet ingredients (buttermilk, egg, and vanilla) and whisk.

Mix together the dry ingredients - the brown sugar, flour, baking soda, baking powder, salt, and cinnamon.

Combine the wet and dry ingredients. Don’t over-mix.

Pour the batter into the prepared pan.

Make the streusel topping by combining the flour, sugar, salt, and cinnamon.

Chop the butter into small cubes. Add it into the streusel.

Mix the butter in with your hands, pressing the butter into the dry ingredients. Spread it on the cake.

Bake for 40-45 minutes, or until done. This coffee cake is thick!

Use parchment paper to remove coffee cake from pan.

Slice it into 12 pieces. Enjoy it warm!
