Gather and prep your ingredients.

Dice, rather than shred, your cheese for melted pockets of ooey gooey deliciousness.

Use your food processor to get an ultra fine dice on the mushroom.

Cook the diced onions for about 4 minutes over medium heat.

Add the mushrooms and minced garlic, and cook 4-5 more minutes. Remove from the heat to cool.

Add all the ingredients (except the cheese) to a large bowl, and mix to thoroughly combine.

Once everything is combined, gently fold in the cheese.

Shape into a round loaf, and place in a parchment lined baking dish.

Top the meatloaf with 1/4 cup barbecue sauce it, and bake for 45 minutes in a 350 F oven.

Top with additional bbq sauce, and let rest 7-10 minutes before serving.
