BBQ Chicken & Cornbread Waffles
Cook and shred two chicken breasts. Slice 1/2 a red onion and 3 dill pickles.

Mix shredded chicken with 2/3 cup of BBQ sauce in microwave safe bowl. Warm for 2 to 3 minutes.

Using a Cornbread Muffin Mix or your favourite recipe, mix cornbread batter.

Set grill to Custom at 350 degrees. Place 1/2 cup batter in each bottom well, close top and cook for 2 1/2 minutes. Repeat with remaining batter.

Place one waffle on a plate. Top with half of shredded chicken, 6 slices of pickle, half of red onion and a cheddar cheese slice.

Top with a second waffle.

Place on grill at Custom setting of 350 degrees for 2 minutes or until cheese melts.

Remove from griddle and cut in half diagonally.

Serve with a side salad! Enjoy!
