BBQ Pineapple Flatbread Pizza
Peel onion using Onion Peeler.

Cut onion into thin slices.

Drain 4 oz pineapple, saving juice.

Add 1/4 of onion to juice.

Add 2 1/2 tsp red wine vinegar.

Add a pinch of salt.

Mince cilantro.

Place Pampered Chef Pizza Stone (with StoneFusion technology) in oven. Preheat oven to 450°.

Add oil to skillet over medium heat.

Cook remaining onion until softened.

Thinly slice poblano pepper.

Toss pepper in bowl with EVOO, salt & pepper.

Cut 4 oz of mozzarella into 1/2” pieces.

Add pineapple & drizzle of oil to onion. Cook 2-3 mins.

Stir in 2 1/2 tsp red wine vinegar, salt & pepper. Cook until carmelized, 1-2 mins.

Place flatbread on Pizza Peel. Brush with oil.

Spread 4 tbsp BBQ sauce between flatbreads.

Top with onion & pineapple, pepper & mozzarella.

Top with 1/4 cup Monterey Jack cheese.

Transfer flatbread to preheated stone. Bake 10-12 mins.
