Beef And Bean Enchiritos

Soften a 10” tortilla in the microwave. Heat and stir one 15 ounce can of refried beans. Spread a layer of beans on the tortilla.

Add a layer of cooked beef taco meat.

Spoon on a little enchilada sauce.

Next is a layer of cheese.

Fold the edges in and roll into a burrito. If using a gluten free tortilla, it may crack. That’s ok. It’s still good.

Grab a baking dish. Pour a layer of enchilada sauce in the bottom of the dish and swirl it around to coat it completely.

Pour on more enchilada sauce and top with cheese.

Bake the enchiritos at 375F for 15-20 minutes or until the cheese has melted completely and the sauce is bubbling.

Serve with avocado and sour cream 😋
