Beef Biryani (Instant Pot Masala)
Soak 3 cups of rice and set aside.

Sauté whole spices, a cup of sliced onions and 2-3 green chilies on oil till the edges of the onions darken

Then add 2 tbsp garlic + 1.5 tbsp ginger and sauté for 30 seconds

Add in your dry spices

Add 1 lb beef cubes and sauté on medium heat to brown the meat

Now add 2 chopped tomatoes and 4-5 dried plums if using (can use lemon later)

Add 2 cups hot water and pressure (manual) for 15 minutes

Quick release and add 2 potatoes cut into half moons

Set to pressure for 3-4 minutes

Meanwhile cook your rice until it is JUST cooked - breaks with a little pressure

Take out the potatoes and saute to dry up the masala (adjust seasoning)

Layer half the rice, then all the meat mix, chilies + cilantro + mint, remaining rice and then drizzle with the color + yogurt mix

Cook covered with a tight fitting lid on lowest heat for 25 minutes and then mix gently to combine
