Best Ever Mashed Potatoes

Yukon Gold Potatoes
3 tablespoons
Unsalted Butter
1/4 cup
Heavy Cream
1/2 teaspoon
Salt

To desired taste

Peel and dice potatoes into 1/2 inch pieces. Add to pot of cool water right away to avoid oxidation.

Put pot on stove and turn burner on to medium.

Bring potatoes to a boil and cook for 12 minutes or until fork tender.

Drain potatoes and add to bowl on stand mixer. Turn on low speed to whip potatoes.

Turn off mixer and scrape down sides. Add salt and turn back on.

Add room temperature butter. Scrape down sides as needed and mix for one more minute.

Turn off mix and fold in room temperature cream.
