Better than Little Debbie Gluten-free Oatmeal Cream Pie
Gather Your Ingredients

Cream the butter, sugar and brown sugar until it’s light and fluffy.

Add the honey and eggs and mix till combined.

Add the cinnamon, nutmeg, baking soda, baking powder, and arrowroot starch.

Mix in the oat flour.

Fold in the remaining gluten-free oats.

Chill the dough for about an hour.

Preheat the oven to 350 degrees and scoop the cookie dough onto a parchment lined baking sheet about 3 inches apart.

Bake the cookies for 8-10 minutes and then let them rest.

Make the cream filling.

Scoop some frosting onto one side of a cookie and then sandwich another cookie on top.
