Mix coconut aminos, rice vinegar, nut butter, coconut sugar, ginger + red pepper flakes for sauce
Remove the mushroom stems to create a flat surface and roughly chop (could sub ground chicken)
Slice green onions. Chop water chestnuts and cashews to get the rest of the ingredients ready.
Heat oil in a pan and add the mushrooms. Sauté until cooked down and shiny, stirring occasionally.
Add the water chestnuts, green onion + cashews. Cook a few min. Add the sauce. Simmer to thicken.
Spoon mix into lettuce cups. Top with cashews and green onion. Enjoy!
