Better-Than-Chipotle Sofritas Burrito Bowl Recipe
Build your own bowl with cilantro lime rice, beans, tofu sofritas, veggies, and guac!
What are sofritas? Tofu braised in chipotle chilies, roasted poblanos, and a blend of spice. Here’s how to make them at home👉
Heat a little oil in a pan over medium heat and crumble in drained extra firm tofu. Break apart using a wooden spoon.

Blend together adobo sauce, tomato paste, lemon juice, onion, garlic, salt, and water. Transfer mixture to skillet and let cook for about 10 mins.

To assemble burrito bowls, portion out cilantro lime rice at the bottom of each bowl. Top with desired amount of tofu sofritas, veggies, and beans.

Add additional toppings and serve!

Don’t forget guacamole! Store leftovers in an airtight container in the refrigerator.
